Vegan Breakfast Ideas

Waking up in the morning, the blood sugar your body needs to make your muscles and brain work their best is usually low. Food helps replenish it. Thats why breakfast is the most important meal of the day!

Fuelling your body with fruit in the morning is my favourite. My body absorbs the nutrients better on an empty stomach, so I feel amazing.  Fruit is digested quicker then most other foods and our body uses different enzymes to digest fruit, so consuming them alone first thing in the morning its just what our bodies crave!


This is my favourite breakfast! Although having it alone for breakfast can be tricky as you need to have alot of it to fuel your body. When i’m having orange juice for breakfast I usually have a second breakfast a couple of hours later of a smoothie or some bananas.
Oranges have so many health benefits it feels silly to not include it into your breakfast. Along with vitamin C, orange juice is also very high in vitamin A, which acts as a moderate antioxidant. Beyond that, it detoxifies the body by increasing the function of the kidneys.

FRUIT SALAD with nuts seeds + Activated Buckwheat Groats

Buckwheat Groats are the beez kneez. Being gluten free and highly digestible, it is well tolerated even by those with digestive disorders.
I put together a bunch of nuts, seeds and activated buckwheat groats the night before and soak them in some almond milk. (or I but soak them on hours or so before I eat them).
I cut up a heap of fruit, then mix in my soaked bits.

PANCAKES with Fruit + Maple Syrup

A lil naughty! But not to naughty. These bad boys are actually fluffy and soft while being Gluten Free AND VEGAN!

¾ cup buckwheat
1 tbsp cornflour
1 tsp baking powder
(Optional flavourings) ¼ tsp ground cinnamon, ⅛ tsp ground cardamom and zest of 1 orange
3 tbsp maple syrup
1 tsp apple cider vinegar
½ cup dairy-free milk

This makes a perfect amount for One adult and One Child. Doubling it would be perfect for Two adults.
