Almighty Vegan Banana Bread

I mean it when I say this is the Almightiest (of that can even be considered a word) of all Almighty Banana Breads. I don’t eat alot of the baking (Ive been known to eat whole slices / cookies within hours of them being made) but this badboy, I have spent alot of time perfecting it so that if and when I consume the entire loaf in a day, I wont beat myself up for smashing back so much bad naughty stuff that makes baking taste so good.

Im proud to say that this Almighty Loaf doesn’t include unrefined sugars, bleached flour, oil or any butters as a matter of fact! Oh and did I mention it goes AH-MAZZING with peanut butter!
Whats great about Banana bread is you don’t have to feel bad enjoying it with your morning Tea or Coffee as it has bananas in it so its pretty much like having a piece of fruit …right!! PLUS with the added seeds and nuts you can start the day off with a nice little serving of the right kinda fats!!
Kiddies will totally dig it as-well, so much sweetness to send their little cells singing!


Almighty Vegan Banana Bread

You will need

3 very ripe Bananas
1½ cups Buckwheat flour
½ tsp Baking Powder
1 tsp Baking Soda
4 heaped tbsp Date Paste (see notes below)
2 tsp Vanilla Essence
1 Flax Seed ‘Egg’


Small handful of Pumpkin Seeds
Small handfull of Sunflower Seeds
1 tsp Chia Seeds soaked in a small amount of water
Small handful of Sliced Almonds

Turn oven to 180 degrees.
Prep Flax Seeds first by mixing 1 heaped tbsp of Ground Flax Seeds with 3 tbsp of water. Pop in the fridge and let sit while you get the rest of the recipe together.
Mix the Chia seeds in water (if you wanted to add this)
Mash the Bananas with a fork (Do Not mix together in blender)

I throw everything in a bowl and mix it all together. Seeds and all.
If you wanted extra sweetness throw in some choc chips.
Bake for about 35 – 40 minutes.
(be sure to check if its ready before pulling out of oven, no one likes undercooked banana loaf)

Enjoy with a hot cuppa….or a Carob Mango Smoothie.

I Love smearing peanut butter all over it with some sliced almonds and cacao nibs.
Its also great with peanut butter and Blueberries.
Even better, pop it in the toaster first to get it a little crispy.



DATE PASTE – I make a big batch of this at the start of the week for my baking.
I use dried Dates but feel free to use fresh ones, you wont need to soak them.
Soak 2 cups of Dried Dates for a few hours.
Drain the water (squeeze out as much as you can)
Blend together, using a tamper to until it forms a paste with no lumps.
I use to replace sugar and Butter.

FLAX SEED ‘EGG’ – For 1 egg, mix together 1 heaped tbsp of Ground Flax Seed with 3 tbsp water. Pop in the fridge for 5-10min until it becomes gel like. Similar to how egg white looks.
